This is how avocado oil production works
From fresh avocado pulp to premium oil.
Avocado oil comes from the pulp - not from the seed. Unlike seeds, the whole fruit (without peel or stone) is blended into a mash and gently cold-pressed. Polyphenols, vitamin E and monounsaturated fatty acids are retained.
Ripe avocados
Fully ripe fruits are processed directly after harvest - max. 4 hour standing time for premium quality.
Pitting & Peeling
Automatic stoner removes shell and core. What remains is pure pulp as a mash.
Cold pressing <27 °C
Gentle pressing preserves polyphenols and vitamin E. EVOO-compliant without solvents.

Avocado Oil: Methods of Production
Avocado oil can be made in different ways, each with different advantages and disadvantages. There are two main methods: producing refined avocado oil and cold-pressed avocado oil.
Refined avocado oil
When producing refined avocado oil, the ripe fruits are first pitted, chopped and centrifuged under heat. The oil obtained has a yellowish-green to deep green color and a characteristic, nutty taste. After extraction, the oil is refined, which means that its smell and taste have been removed using chemical additives. The resulting product is a clear, light-colored oil that barely resembles avocado oil and has lost almost all of its valuable ingredients. Refined avocado oil is often used in cosmetic products.
Cold-pressed avocado oil
Cold-pressed avocado oil is produced in two ways: through 2-phase or 3-phase decantation.
2-phase decanter:In this more environmentally friendly method, the fruit is peeled and cored before entering a disintegrator. The mass is processed in the Malaxeur and the decanter separates it into the oil and pulp phase. This method uses little fresh water and allows for a high oil yield, making it both economically and environmentally beneficial.
3-phase decanter:This classic method requires more fresh water, which is not beneficial for the environment. Nevertheless, the pulp is separated from the oil here too, but with much more water consumption.
Avocado oil press: How it works
The way avocado oil presses work is aimed at gently extracting the valuable oil from the flesh of the avocado. The basis of most pressing processes is the mechanical process, which takes place in several steps:
Preparation:The ripe avocados are selected, washed, pitted and peeled. Careful selection is crucial as the quality of the fruit has a direct impact on the final product.
Crushing:The prepared avocados are made into small pieces or into a paste to facilitate oil extraction.
Pressing:In the actual pressing process, the crushed mass is fed into a press. There are different pressing methods: hydraulic presses use the pressure of liquids, while mechanical presses are based on rotating screws. Both methods involve crushing the pulp, which allows the oil to be extracted.
Separation:After pressing, the oil obtained is separated from the remaining pulp. Various technologies can be used to remove impurities from the oil and improve its quality.
Storage:The avocado oil obtained should be filtered immediately and stored in appropriate containers to preserve its freshness and nutrients.
Avocado oil press: Economic aspects
Investing in a high-quality avocado press pays off in the long term. Operating costs can be significantly reduced through a higher pressing yield and a longer service life of the machines. Using different pressing methods can help manufacturers diversify their product range and enter new market segments, which has a positive impact on sales and competitiveness.
The farmer is faced with several options for utilizing his avocado harvest. With an estimated growing area of around 20 to 30 hectares necessary to harvest a total of 300,000 kg of avocados per year, each option has its own advantages and disadvantages.
Direct sale of avocados:The farmer can sell his avocados directly. This option offers the advantage of instant cash flow as it can monetize the fruits quickly. However, this sale is heavily dependent on the freshness of the fruit, as they spoil quickly and are prone to bruising. The farmer also has to monitor the current market price, which can lead to fluctuations in yields.
Processing of avocados by third parties:Another option is to give the avocados to third parties for processing. In this case, the farmer does not receive any direct profit from the sale of the raw crops, but is dependent on the quality of processing and the conditions of the third party. This could reduce yield and result in higher costs. Again, the farmer typically has less control over the quality of the end product and the associated price.
Investing in your own avocado oil press:Investing in your own press ultimately offers the farmer the most advantages. He has control over the entire production process and can determine the quality of the oil himself. Although this option requires an initial investment, it allows greater profitability in the long term as the farmer processes the fruit himself and markets the oil directly. This option pays for itself within a year.
In comparison, selling avocados directly offers an immediate, but potentially uncertain, return. Processing by third parties may result in lower profits and poses quality risks. Your own press, on the other hand, is an investment in the future that allows the farmer to increase his yields and be less dependent on external processors or market prices.
